Most people think of old fashioned artisan bread as a nice big loaf of crusty white bread, but flatbread out dates yeasted breads. In ancient Mesopotamia (modern day Iraq) the Sumerians discovered that edible grains could be mashed into a paste and then baked/hardened into a flatbread. Tortillas to matzohs, flatbread has evaded just about every culture.
Not only is their a lot of culture in flatbread, there is room for innovation in the kitchen. Flatbread provides a basis or an addition to spruce up any meal. Believe me... Anything goes with flatbread!
